Holy Smoke BBQ serves Southern-style barbecue dishes based on regional American smoked-meat recipes. The menu is short and to the point, featuring pulled pork, brisket and chicken on a bun as well as dry pork ribs, chili con carne and a sweet smoked chicken-Brunswick stew, which is based on a traditional recipe served in Brunswick, Georgia. “There are certain things with barbecue that you can’t mess with; it’s slow cooked in a smoker,” says owner Alec Ferguson. As well, he says all of the ingredients must be the real deal. “They can’t be anything fake or processed,” he says.
The restaurant’s multiple locations also serve milkshakes that Alec says are the product of hours of research and an investment in the best equipment. He’s also extremely proud of Holy Smoke’s array of house sauces concocted by the restaurant’s founder and former owner, chef Torin Shuster.
“Torin came up with over 100 kinds of barbecue sauce,” he says. “We currently serve 18.” Among these are flavours popular in the southern states as well as popular selections such as the apple barbecue, Jack Daniel’s and more than one mustard-based sauce.
I have tried Holy Smoke twice now, once for dine in and the other was take away. Both times exceptional food, service and portion. It's a bit off the beaten track, but the reward is worth seeking out this authentic little BBQ joint. Go hungry, eat lots and try the array of sauces!
